Cheesy Roasted Asparagus

Serves 4-6

NEED:

1 1/2 pounds of fresh asparagus

1 tablespoon of extra virgin olive oil

1/2 cup of grated parmesan cheese

salt and pepper to taste

 

HOW:

1. preheat oven to 450 F/ 220C

2. snap off woody ends of asparagus and discard

3. place asparagus, olive oil, salt and pepper in a container with a lid or a snap lock bag.

4. shake until asparagus spears are well coated

5. place asparagus onto parchment lined baking sheet

6. Bake for 10-15 minutes, or until asparagus has softened slightly

7. sprinkle on parmesan cheese and serve immediately
