Sweet Potato Patties

2 medium sweet potatoes, peeled and chopped
1/2 cup of grated carrot9
1/2 cup of grated zucchini
4 scallions, sliced thinly
1 teaspoon of salt
2 large eggs, whisked
1/2 cup of cooked quinoa or rice
coconut oil for pan-frying

Steam sweet potatoes until soft and mash. Add all other ingredients and mix until combined. Divide into 8-10 equal portions and place into a large frying pan (with coconut oil) on medium heat. Flatten into paddies approx. 1/2 inch thick. Cook until golden brown on both sides.
